It’s surely been along time since I've been on here, but I couldn't let this experience past without sharing it.
It begun with my latest obsession - Food Network. My family members find it somewhat ironic that I watch it so much, as I am never the first in the kitchen. Don’t get me wrong I do get in there, but it’s surely never a mad rush. Setting that aside Food Network = “a shot”. Yes, there are some shows I will miss while there are others, I can't seem to get enough of; and one such show is Cupcake Wars.
Cupcake Wars is a race against time for 4 teams to bake and create the most mind blowing cupcakes in a matter of minutes. It has of course the usual elimination rounds, while the final round involves the building of an enormous cupcake display table to display 1000 cupcakes (that the teams will make) for a specific display or theme. So this show was my motivation to bake cupcakes.
About a week ago I got the recipe Cranberry Cupcake & Upside-down Pineapple Cupcake, and though both seem quite tasty I wasn't feeling them.
Then I saw it, THE ONE, THE ONE THAT
ahhhhhh I had to make.....
COCOA COLA CUPCAKE!
Now I’m not a caffeine fan, or even a cocoa cola fan - I drink them, but its neither here or there for me - but that recipe called me. I had to do it!!!!!!!!!!!!!!
So I went to the supermarket got the ingredients and here is how I lost cupcake wars.............
Ingredients - Please ignore the pineapple & water crackers in the background.
Part 1 - I must say I got rather excited here, it smelt great !!!!!
Part 2 was much too regular to take a picture of - but here is the combination of part 1 & 2 of recipe; as you see not all my marshmallows melted.

WARNING this recipe makes quite a bit. I know the more avid baker would have realized this but I had not a clue that it would be this much. So I had to resort to the
“countrygal cupcake baking tin".
Please don't try this - it actually makes no sense, the cupcakes bake with no shape.

There was even some left over for a small baking tin.
Now I don't think of myself as a superstitious person but …..
Old folks say when a black moth is in your house, it is a dead family member visiting.
Now believe me I gave this moth a chance, but it came flying too close to the mixture, so I like the true Olympian that I am, I jumped up and somehow managed to hit it down with a pan. Score, bat on the ground – GAME OVER...... back to cupcakes.

Minutes later I looked down to notice the bat had crawled over and was lodged next my foot (it stayed there for the entire clean up exercise). My mother said my grandmother had come to visit me, she loveedddddddddddd baking. I felt honored that my grandmother visited last night.
Now this is why I lost the WAR............the stove.

Not sure if you can see it, but there are not numbers on the dial of the stove, they have all disappeared with time. So you know when they say preheat at 350, I can tell you I just turned the dial and you know the end of that story. The timing was off, because the heat was too low or too high - horse dead and cow fat.

Am I going try it again? Most defiantly but I'm going to 1/2 or 1/4 the measurements.

Coca Cola Cupcake
Part One
• 1 cup coca cola or other cola drink • 1/2 cup butter
• 1/2 cup vegetable oil • 1/4 cup powdered cocoa
• 22 large marshmallows
Part two
• 2 cups all purpose flour • 2 cups sugar
• 1 teaspoon baking soda • 1 teaspoon vanilla
• 1 cup buttermilk • 2 large eggs, beaten
Coca Cola Cupcake Recipe Directions
· Preheat oven to 325 degrees. Line cupcake pans with paper liners. These cupcakes work best with the silver metallic liners.
· Part one – in a small saucepan mix cola, butter, vegetable oil & cola. Bring to boil, remove from heat, and add marshmallows. Place lid on saucepan and leave until marshmallows begin to melt. Stir well
· Part two – mix flour, sugar and baking soda into a large mixing bowl. Add buttermilk, eggs & vanilla. Mix well
· Combine Part One and Part Two in the mixing bowl. Spoon cupcake batter into cupcake pan liners until they are 1/2 to 2/3 full.
· Bake at 325 degrees for approximately 20 minutes or until toothpick inserted in center comes out clean.
Coca Cola frosting.
¼ cup powered cocoa
6 tablespoons coca cola or other cola
½ cup butter
3 ¾ powered sugar
1 cup pecans
1 teaspoon vanilla
Directions
In a medium saucepan, mix together cocoa, cola, and butter. Heat over medium heat until melted then bring to a boil. Remove from heat and add powdered sugar, pecans and vanilla. Stir until blended well.
Let frosting cool until stiff enough to frost cupcakes.
